Reisman's fifth cookbook is one of the many recent cookbooks that conform to Canada's Food Guide to Healthy Eating, published late in 1992. Rose Reisman Brings Home Light Cooking was written in association with the Canadian Breast Cancer Foundation, and part of the proceeds of each book will be remitted to the foundation for use in furthering breast cancer research and education.

The 240 recipes are divided into 10 sections: appetizers, soups, salads, fish and seafood, chicken, meat, vegetables, pasta and grains, sauces, marinades and dressings, desserts. Each chapter is introduced with tips and/or cooking instructions. Other features of this book include short chapters on healthy and delicious eating out, menu planning, and a glossary. A good index and 16 full-page colour photographs round out the book.

Each recipe page has the same set-up - one recipe with ingredients listed in both Imperial and metric measures, straightfor­ward cooking instructions (mainly for stove top and oven), the serving size, a tip section, which includes possible ingredient varia­tions, and a nutritional analysis listing the calories, proteins, fat, carbohydrates, sodium, cholesterol and fibre per serving. Schools should be aware that some recipes use wine and liquor as an ingredient.

An excellent cookbook in which healthy eating is stressed.
