Having already written four cookbooks, besides being the co-owner of a gourmet take-out catering service, Susan Mendelson is well qualified to put together her latest book, The Expo 86 Cookbook. This is a book about West Coast hospitality, about the West Coast dining-eating lifestyle, and, as such, it stresses freshness and simplicity. It has a broad seafood section, including recipes for cooking with salmon, halibut, and red snapper; a section on tips for steaming and stir-frying vegetables to maintain maximum flavour and colour; sections on quiche, casseroles, pizza; on barbecues; on starters, salads, and desserts.

In addition, it has a section on Susan's favourite restaurants in Vancouver; so it is also a personal guide to the multi-ethnic mix of places to dine in that city. This section includes a note on each restaurant, with the address and phone number, along with favourite recipes from each.

To further enhance this book, there are fourteen full-colour pages of food photography by Derik Murray, whose superb work is well known to readers of such magazines as Bon Appetit, Vancouver Magazine, Western Living, Town and Country, and Connoisseur Magazine.

Cerlox binding ensures that the book will lie flat without strain on the pages, which are made of good quality paper. The recipes are laid out in an easy to read manner, ingredients on one side and instructions on the other, and a line of helpful advice at the bottom. I can find no fault with this beautiful cookbook, which will prove to be an inexpensive, everlasting souvenir of Canada's Expo 86.
