Lynn Mendelson is the twin sister to Susan Mendelson, well known author of Mama Never Cooked Liked This.* The humorous cover, a reproduction of a silk-screen by Guy Suffet, a French artist, sets the mood for the book; simple, light-hearted, and amusing. Included are 121 recipes from around the world, ranging from Szechuan Chicken Salad to Indonesian Chicken Satay, from Moroccan Chicken Casserole to Egyptian Lemon Chicken, as well as typically North American dishes. Sections are devoted to appetizers, soups, salads, and roasted, baked, stir-fried, and barbecued chicken, to coq au vin and to casseroles. A complete index facilitates the use of the book. Coil binding permits the book to lie flat when being used. Ingredients are listed in both imperial and metric measures. Instructions are straightforward enough for students to follow.

As chicken is rapidly replacing beef as the number one meat on the Canadian market because of its economy, versatility, and lack of calories, cholesterol, and fat, cooks are eager to expand the number of ways they can prepare chicken. Chicken! Chicken! Chicken! ideally fills this purpose. I highly recommend this book for the home cook and for home economics classes.
