As they state: "The mechanics of drying are not difficult and the rules are straightforward, but they must be closely followed for successful results." General instructions for drying are first outlined, followed by specific instructions for drying fruits, vegetables, and leathers. Suggestions are given for sun, solar, and oven drying, as well as drying in a convection dryer and a forced air dehydrator. There are also sections devoted to answering commonly asked questions and to the storage and uses of dried foods. Detailed instructions are given for building a home dryer, and a list of points to consider when buying or building a dryer is included. The book is well-illustrated with black-and-white photographs by Bill Fleming and by diagrams to show how to build a dryer.
