Rose Murray, author of The Christmas Cookbook and food articles in Canadian Living, has written a cookbook highlighting thirty-one Canadian-grown vegetables from asparagus to zucchini. Each vegetable has its own chapter that includes a few paragraphs on its history, a line drawing to identify it, and some tips for choosing or buying, storing, preparing, and cooking. This introductory section is followed by a few easy-to-follow recipes featuring the vegetable.

Three other chapters complete this book: one describes the different methods of cooking vegetables, another, the preparation of various vegetable combination dishes, and the last contains recipes for dressings and sauces that go with vegetables.

The 152 basic recipes in this cookbook and their variations use vegetables in every way from soups, appetizers, salads, main dishes through to desserts. Each recipe is set out with the ingredients in both Imperial and metric measure down the left side of each page and the method of preparation in paragraph form on the right. If variations are suggested, they are found at the end of the recipe.

If you require a basic introduction to Canadian vegetable cookery, this is an obvious choice.
